This standard specifies the requirements, methods of sampling and test for for mayonnaise for edible purpose. This includes requirements for different types of mayonnaise i.e. real mayonnaise, medium fat mayonnaise and low fat mayonnaise along with their ingredients; guideline for food additives and food preservatives used for the product; hygienic and legal requirements; and the packaging and marking provision for the product. Various food safety parameters (e.g. trans fatty acids, heavy metals and microbiological limits) have been included. |
